At The Poké Lab, we bring together the bold flavors of Japan and Hawaii, using fresh, locally sourced ingredients to create healthy, satisfying poke bowls. Every bowl is a reflection of our belief that good food can be simple, nourishing, and full of flavor.

Travel Through Taste
Based in Amsterdam, our food truck "Stu" brings the world to your plate. Inspired by global flavors and local markets, each bowl is a little journey — and yes, we can travel to you too! Whether it’s a festival, event, or private party, we offer catering that brings the Poké Lab experience to your doorstep.

Community & Responsibility
We care deeply about where our food comes from. That’s why we work closely with local vendors at Albert Cuyp (where our main location is ) to source fresh produce daily. From nice and soft avocados and mangos to daily delivered fresh fish, everything is chosen with care - for your health, for the community, and for the planet.

We specialise in Poké Bowls and Poké We've got a diverse menu to satisfy everyone – from large bowls to satisfy hunger, to cute mini bowls as snacks, along with various side dishes like crispy chicken, wakame salads, pickled cucumber salad, and air-fried tempura shrimps. If you're into bites, we've got you covered with small laboratory treats, both vegan and non-vegan, and even Poké, customised to suit your event. Choose from our delicious options, including homemade mango-marinated tofu, teriyaki chicken, marinated salmon, and air-fried marinated shrimp or our best marinated Tuna.

    Just tried the Poke Lab food truck and WOW — what a flavor explosion! Everything tasted super fresh, from the melt-in-your-mouth salmon to the crunchy toppings and perfectly seasoned rice. You can really tell they care about quality ingredients. The portions are generous, the staff is super friendly, and the service is quick. Perfect for a healthy and delicious lunch on the go. Highly recommend if you're a poke bowl lover (or even if you're trying it for the first time)!

    Fantastische ervaring met The Poké Lab voor een verjaardagsevenement in Amstelveen!
    Voor mijn verjaardagsfeest heb ik The Poké Lab To Go ingehuurd, en het was een geweldige keuze. Ze kwamen met hun foodtruck naar Amstelveen en zorgden voor een moeiteloze, professionele service.

    We hadden een speciaal menu samengesteld met glutenvrije, veganistische en halal opties, en alles werd tot in de puntjes verzorgd. Het eten was vers, kleurrijk en ontzettend lekker - onze gasten waren erg onder de indruk.

    Het team dacht goed mee, hield rekening met alle dieetwensen en zorgde voor een feestelijke sfeer. Een echte aanrader voor iedereen die een origineel en gezond catering concept zoekt!

    I had a fantastic experience with The Poké Lab To Go!
    We rented their food truck for a few hours during our company event at Urban Arrow, and everything was spot on. The team was professional, the setup was smooth, and the food was a hit. We had requested a customized menu for the occasion with nice Aperol Spritz , and they delivered exactly what we asked for - fresh, delicious, and beautifully presented. Everyone at the event loved it!

    Highly recommended for corporate events or any gathering where you want something healthy, fun, and memorable.
